This picture was taken in El Paso, Texas either in 1974 or 1975.  Juanita was surprised to have this opportunity to meet Mother Theresa of Calcutta India.   She considered it the highlight of her life.

To all her nieces and nephews from the oldest to the youngest, we knew her as a wonderful cook and baker.  It seems fitting that we should memorialize Juanita with her cooking and baking.  She was so good at preparing wonderful meals and treats that it is impossible to say what was her best.  In the 1950's she even had one of her recipes published in a national magazine.  Many of us have never eaten better "divinity" candy than that which she would prepare in an evening while we played cards or board games at her kitchen table.  Ines Franco remembers her Coke Cake fondly and has provided us with Juanita's recipe.  If anyone has any other favorite recipes that Juanita prepared please submit them -- especially the recipe for "divinity!"


This recipe originally came from my aunt, Juanita Franco.  The recipe was for a chocolate "Coke Cake."  The batter and the frosting are made with Coca-Cola.  She would make this cake for us when we would come to visit.  Juanita had a great reputation for her cooking skills.  Anyway, she gave the recipe for the cake to my mother, Esperanza Blanco Franco, and just recently, my mom gave it to me.  Now, I am not sure where Juanita got the recipe from ... who knows?  This cake is a favorite among us and it always reminded me of my Tia Juanita.  I just had to share it with everyone else.

Juanita Franco's COKE CAKE
Preheat oven to 350 degrees Fahrenheit.
Spray two 9" inch round pans or one 13” X 9” rectangular baking dish with non-stick spray and sprinkle with some flour.

Batter:
1 cup margarine (soft)
2 cups All Purpose Flour or Cake Flour
3 tablespoons cocoa
1 teaspoon vanilla
1/2 cup buttermilk
1 1/2 cup sugar
1 teaspoon baking soda
2 eggs
1 1/2 cup mini-marshmallows
1 cup of Coca-Cola

Frosting:
1/2 cup soft butter
3 tablespoons cocoa
1/2 cup of Coca-Cola
1 box of white powdered sugar (2 cups)
Add coke -- just enough to wet the icing.

Bake for 30 minutes.  Poke the cake with a toothpick.  If the toothpick comes out clean, it is done baking.  Let cool and frost.  Enjoy!
